1 onion, finely chopped

2 cloves garlic, minced

1 red bell pepper, thinly sliced

1 yellow bell pepper, thinly sliced

1 zucchini, diced

1 can (14 oz/400g) crushed tomatoes

1/2 cup black olives, pitted and halved

1 teaspoon dried basil

1 teaspoon dried oregano

Salt and black pepper, to taste

Fresh basil leaves, torn, for garnish

1. Preheat the Cast Iron Dutch Oven:

Place your cast iron Dutch oven on the stove over medium heat. Add olive oil and let it heat up for a minute.
2. Sauté Aromatics:

Add chopped onion to the Dutch oven and sauté until translucent, about 3-4 minutes.

Stir in minced garlic and cook for another minute until fragrant.
3. Add Vegetables:

Add sliced red and yellow bell peppers, and diced zucchini to the Dutch oven. Sauté for about 5 minutes until the vegetables start to soften.
4. Simmer with Tomatoes:

Pour in the crushed tomatoes and add black olives, dried basil, and dried oregano. Season with salt and black pepper. Stir well to combine.

Let the sauce simmer for about 15-20 minutes over low heat, allowing the flavors to meld and the vegetables to become tender.
5. Cook Spaghetti:

While the sauce simmers, cook the spaghetti according to the package instructions until al dente. Drain and set aside.
6. Combine and Garnish:

Add the cooked spaghetti to the Dutch oven with the sauce. Toss well to coat the spaghetti evenly with the sauce and vegetables.

Garnish with torn fresh basil leaves for a burst of color and freshness.
7. Serve and Enjoy:
