Spaghetti

Ingredients

Serves 4

  • 12 oz (340g) spaghetti

  • 2 tablespoons olive oil

  • 1 onion, finely chopped

  • 2 cloves garlic, minced

  • 1 red bell pepper, thinly sliced

  • 1 yellow bell pepper, thinly sliced

  • 1 zucchini, diced

  • 1 can (14 oz/400g) crushed tomatoes

  • 1/2 cup black olives, pitted and halved

  • 1 teaspoon dried basil

  • 1 teaspoon dried oregano

  • Salt and black pepper, to taste

  • Fresh basil leaves, torn, for garnish

  • Grated Parmesan cheese, for serving

Cookware Used

1. Preheat the Cast Iron Dutch Oven:

  • Place your cast iron Dutch oven on the stove over medium heat. Add olive oil and let it heat up for a minute.

 

2. Sauté Aromatics:

  • Add chopped onion to the Dutch oven and sauté until translucent, about 3-4 minutes.

  • Stir in minced garlic and cook for another minute until fragrant.

 

3. Add Vegetables:

  • Add sliced red and yellow bell peppers, and diced zucchini to the Dutch oven. Sauté for about 5 minutes until the vegetables start to soften.

 

4. Simmer with Tomatoes:

  • Pour in the crushed tomatoes and add black olives, dried basil, and dried oregano. Season with salt and black pepper. Stir well to combine.

  • Let the sauce simmer for about 15-20 minutes over low heat, allowing the flavors to meld and the vegetables to become tender.

 

5. Cook Spaghetti:

  • While the sauce simmers, cook the spaghetti according to the package instructions until al dente. Drain and set aside.

 

6. Combine and Garnish:

  • Add the cooked spaghetti to the Dutch oven with the sauce. Toss well to coat the spaghetti evenly with the sauce and vegetables.

  • Garnish with torn fresh basil leaves for a burst of color and freshness.

 

7. Serve and Enjoy:

  • Spoon the French-inspired spaghetti into individual bowls. Sprinkle grated Parmesan cheese over the top.
