Berry Compote

2 cups mixed berries (such as strawberries, blueberries, raspberries, and blackberries)

1. Prepare the Berries:
Wash the berries thoroughly under cold running water. Remove stems and hulls as needed. If using larger berries like strawberries, slice them into smaller pieces.

2. Combine Ingredients in a Saucepan:
In a medium saucepan, combine the mixed berries, granulated sugar, water, and lemon juice. Stir gently to combine the ingredients.

3. Cook the Compote:
Place the saucepan over medium heat and bring the mixture to a gentle boil. Reduce the heat to low and let it simmer for about 10-15 minutes, stirring occasionally. The berries will break down, and the mixture will thicken into a compote-like consistency.

4. Add Vanilla (Optional):
If desired, stir in the vanilla extract for an extra layer of flavor. Mix well.

5. Taste and Adjust:
Taste the compote and adjust the sweetness by adding more sugar if needed. Keep in mind that the compote will thicken slightly as it cools, so it's okay if it seems slightly runny while hot.

6. Cool and Store:
- Remove the compote from heat and let it cool to room temperature. It will continue to thicken as it cools down.
- Transfer the compote to a clean, airtight container and store it in the refrigerator for up to a week.
7. Serve and Enjoy:
Spoon the berry compote over pancakes, waffles, yogurt, ice cream, or desserts. Enjoy the burst of fruity goodness in every bite!
