Herb Potatoes

Ingredients

Serves 4

  • 2 pounds baby potatoes, washed and halved

  • 3 tablespoons olive oil

  • 2 cloves garlic, minced

  • 1 teaspoon dried rosemary

  • 1 teaspoon dried thyme

  • Salt and black pepper, to taste

  • Fresh parsley, chopped, for garnish

Cookware Used

1. Preheat the Cast Iron Dutch Oven:

  • Place your cast iron Dutch oven on the stove over medium-high heat. Add olive oil and let it heat up for a minute.

 

2. Sauté Garlic and Potatoes:

  • Add minced garlic to the hot Dutch oven. Sauté for about 1 minute until fragrant.

  • Add halved baby potatoes to the Dutch oven. Cook, stirring occasionally, until the potatoes are golden brown and slightly crispy on the edges, about 10-12 minutes.

 

3. Add Herbs and Seasoning:

  • Sprinkle dried rosemary, dried thyme, salt, and black pepper over the potatoes. Stir well to coat the potatoes evenly with the herbs and seasoning.

 

4. Cover and Simmer:

  • Cover the Dutch oven with its lid. Reduce the heat to low and let the potatoes simmer for about 15-20 minutes or until they are tender and fully cooked. Stir occasionally to ensure even cooking.

5. Garnish and Serve:

  • Remove the Dutch oven from the heat. Taste and adjust the seasoning if necessary.

  • Garnish the herb potatoes with freshly chopped parsley for a burst of color and added freshness.

 

6. Serve Hot:

  • Spoon the herb potatoes into a serving dish or serve directly from the Dutch oven.

  • Enjoy your flavorful and aromatic herb potatoes as a delightful side dish for any meal!

 

Note: Feel free to customize the herb selection according to your taste preferences. Fresh herbs can also be used for a more vibrant flavor.
