2 pounds baby potatoes, washed and halved

3 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon dried rosemary

1 teaspoon dried thyme

1. Preheat the Cast Iron Dutch Oven:

Place your cast iron Dutch oven on the stove over medium-high heat. Add olive oil and let it heat up for a minute.
2. Sauté Garlic and Potatoes:

Add minced garlic to the hot Dutch oven. Sauté for about 1 minute until fragrant.

Add halved baby potatoes to the Dutch oven. Cook, stirring occasionally, until the potatoes are golden brown and slightly crispy on the edges, about 10-12 minutes.
3. Add Herbs and Seasoning:

Sprinkle dried rosemary, dried thyme, salt, and black pepper over the potatoes. Stir well to coat the potatoes evenly with the herbs and seasoning.
4. Cover and Simmer:

Cover the Dutch oven with its lid. Reduce the heat to low and let the potatoes simmer for about 15-20 minutes or until they are tender and fully cooked. Stir occasionally to ensure even cooking.

Remove the Dutch oven from the heat. Taste and adjust the seasoning if necessary.
